Holiday Treats — Creating Precious Memories

Holiday Treats! Making these wonderful special Holiday Treats together each Christmas creates Precious Memories for a Lifetime! I remember baking with my Mimi (grandmother) from a young girl to adulthood. My Mimi was the best baker I’ve ever known! However, she could totally “Kill” a hamburger pattie or a roast – basically any meat! She cooked those meats until you could use them for bricks! LOL — She wasn’t the best cook but she could definitely bake! I got my love of baking from her and I became “Mimi” to my grandchildren and shared theses baking traditions with them every year! Furthermore, now my grandchildren are in college and my 18 year old granddaughter was baking with me today, helping me bake up these goodies I’m sharing with you today, and I told her, “It won’t be long until you become Mimi to your children & grandchildren and you can share these baking goodies with them! What a special moment! I hope you enjoy these delicious Holiday Treats that I am happy to share with you this year!!

Mocha-Apple Cake with Browned Butter Frosting

Makes: 12 Servings; Hands-On Time: 25 minute; Total Time: 3 hr. 30 min. including frosting

Ingredients

  • 1 cup chopped pecans
  • 1 cup sugar
  • 1 cup Canola Oil
  • 2 large eggs
  • 1 Tbsp. Instant Coffee Granules (I didn’t use this one – your choice)
  • 1 tsp. vanilla extract
  • 3 cups all-purpose flour
  • 2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1 tsp. ground nutmeg
  • 1/2 tsp. salt
  • 4 cups peeled and diced Granny Smith apples
  • 2 (2.6-oz) milk chocolate candy bars, chopped
  1. Preheat oven to 350 degrees. Bake pecans in a single layer in a shallow pan 8 to 10 minutes or until toasted and fragrant, stirring halfway through.
  2. Beat sugar and the next 4 ingredients at speed with a heavy-duty electric stand mixer for5 minutes. Stir together flour and next 4 ingredients; gradually add flour mixture to sugar mixture. Beating a low speed just until blended. Add apples, chocolate and pecans; beat just until blended. Spoon into 2 greased and floured 9-inch round cake pans.
  3. Bake at 350 degrees for 28 to 32 minutes or until a wooden pick inserted in the center comes out clean. Cool in pans on wire racks; remove from pans and place on wire racks and cool completely (about 1 hour). Spread Browned Butter Frosting between layers and on top and sides of cake.

Browned Butter Frosting

Makes about 3 1/2 cups

Ingredients

  • 1 cup butter
  • 1 (16.oz) package powdered sugar
  • 1/4 cup milk
  • 1 tsp. vanilla extract
  1. Cook butter in a small heavy saucepan over medium heat, stirring constantly, 6 to 8 minutes or until butter beginsn to turn golden brown. Remove pan immediately from heat. Pour butter into a bowl. Cover and chill 1 hour or until butter is cool and begins to solidify.
  2. Beat butter at medium speed with an electric mixer until fluffy; gradually add powdered sugar alternately with milk, beginning and ending with sugar. Beat at low speed until well blended after each addition. Stir in vanilla.

Chocolate Oatmeal Cookies

Ingredients

  • 2 cups of sugar
  • 4 heaping tsp. of Cocoa
  • 1/2 cup Milk
  • 1 stick of butter
  • 1/2 small jar Crunchy Peanut Butter
  • 3 cups Instant Minute Oats
  • 1 ttsp. vanilla

Put sugar, cocoa and vanilla in a heavy saucepan and heat on medium-high heat stirring until completely mixed. Then add the butter and stir to melt butter. Continue cooking to a rolling boil until mixture makes a ball in cold water. Add vanilla. Stir in Peanut Butter until it melts. Add oats and str in thoroughly. Spoon onto parchment and let cool. Cookies will setup and harden when they cool.

Peanut Butter Cookies

OK – This is a Huge Secret!! Go buy the Peanut Butter cookie mix at the store and use this to make your Peanut Butter Cookies! Why Not?? All you’re doing is using the same ingredients you would use to make peanut butter cookies from scratch — but it’s already combined together for you! So….. That’s what I do to make my basic Peanut Butter Cookies.

Extra Special Peanut Butter Cookies

Just add Milk Chocolate, White Chocolate & Butterscotch chips to your Peanut Butter cookie mix. This will make Awesome Extra Special Peanut Butter Cookies!!

Peanut Butter Cookie Sandwich

This is a new idea I had this year and boy are they Delicious!! Just take 2 peanut butter cookies and put Reese’s brand Peanut Butter in between them. Get the Chocolate candy melts and melt them according to directions. Dip the Cookies in the chocolate and let harden. I promise you will Love These and people will think you spent a Lot of Time making them!!

7 Layers of Goodness

Ingredients

  • 1 stick of butter
  • 1 cup of graham cracker crumbs
  • 1 cup milk chocolate chips
  • 1 cup of white chocolate chips
  • 1 cup of peanut butter chips
  • 1 cup of butterscotch chips
  • 1 cup of coconut
  • chopped pecans as needed
  • 1 can of Eagle Brand Sweetened Condensed Milk

Melt butter in a glass casserole dish. Add graham cracker crumbs and make into a crust. Next, Make a layer from each of the different types of chips, then the coconut then pecans. Pour the entire can of Eagle Brand over the entire pan and cook in a 350 degree oven for 30 minutes. Remove and let cool. Slice into square and get ready to enjoy some yummy deliciousness!!
